They are chashu-man (fried pork buns) and an-man (bean-jam buns). This is a pork bun. The large, chunky ingredients are bamboo shoots and shiitake mushrooms, and the slightly sweet chashu is different from that of other pork buns.Bean-jam buns feature a dark black sesame starch with a moderate sweetness. The flavor of azuki beans and the richness of black sesame seeds are perfect.
At 551 Horai, artisans at each store make and steam each one by hand. Demonstration sales of wrapping sweet bean paste, “kuru-kuru-kuru”, is so fast-paced that your eyes will be glued to the dough. These two types of fork buns and bean jam buns are only possible because the main store is large enough to hold many steamers.
